Thai Coconut Pancakes with Pandan Leaf Topping

I used to have this traditional thai dessert on the night markets of Bangkok and Hua-Hin. I love their special taste given by the coconut milk and their texture: Because of the recipe without eggs, you can let them soft and wet inside. The pancakes are delicious with pandan leaf sauce or without anything

Food on a night market in Thailand

Ingredients:

– 1 cup all-purpose flour

– 2 tbsp sugar

– 1 cup coconut milk

– some vegetable oil for frying

–  5 tbsp pandan flavour thai custard mix (available in any asia store)

1. Put the flour into a bowl and add the coconut milk and the sugar

2. Heat 4 tbsp water with the pandan leaf custard mix

Enjoy your pancakes 🙂
